Prepare some hot water in a kettle (not from the tap...or rather, yes, tap water is great but only after filtering it with a Brita or a BWT, please!). In the meantime grind your coffee beans very finely, unless you are using a pre-made espresso ground. Fill the portafilter with your espresso ground, tamp down and lock in place. Pour the hot water from the kettle into the small boiler on the top of the machine (aka the ROK chamber), lift the arms up to the top and allow the water to pre-infuse the coffee. When the coffee is saturated and starts to drip from the filter holder (10-20 secs), push the handle down hard and hold until you extract the desired quantity of espresso. The machine pushes the water through the bed of finely ground and pressed coffee with a pressure of 8-10 atmospheres, the same applied by professional electric espresso machines.
